Summer salad recipeSummer salad Ingredients: 1 small crispy lettuce
half a cucumber 1 Large carrot 3 Spring onions A tub of cress Cherry tomatoes Dressing Ingredients: 3 tblsp of olive oil 1 tblsp of White wine vinegar 1 teaspoon of clear honey A pinch of dried herbs A pinch of salt and ground black pepper Method: Remove your lettuce leaves and chop into small pieces Cut the cucumber lengthways then carve out the middle and remove the seeds. Then cut into thin slices Peel your carrot and grate it using the larger holes in your grater. Add the cumber and lettuce to your salad bowl. Then cut both ends of the spring onions, then slice them thinly. Add the unions to the salad bowl and then add the cress, use scissors to cut the cress from the tub. Put all the dressing ingredients into a jar on container with a tight lid. Then shake well and pour over your salad. Serve and enjoy. This is a really light and tasty meal that toddlers can eat as finger foods. You can add this to any other meal add as a side dish or just eat it on its own. Try experimenting by adding other ingredients into the mix you will soon find out your toddlers favorites. This salad is great for the summer and can be part of a picnic basket. It's also super quick to prepare so is a really healthy toddler recipe. The best kind of convenience food. |
