Stuffed pancakes recipeStuffed pancakes Ingredients: 125g (4oz) plain flour Pinch of salt 1 Egg 300ml (1/2 pint) Milk Sunflower oil Stuffed pancakes filling Ingredients: 1 tblsp Sunflower oil 400g (14oz) Lean minced beef or turkey 340g (11oz) Jar of tomato past sauce 150g (5oz) Sour Cream 50g (2oz) Grated cheddar cheese Method for making: Put a sieve over a large bowl and pour in the flour and salt. Then shake the sieve until all the flour has passed through. Next press a whisk into the center of the flour to make a hole. Then break an egg and put into the hole. Then put in a tblsp of oil and 2 tblsp of milk. Now use the whisk to beat the mixture together making sure it's well mixed. Heat a small frying pan on a medium heat for around a minute. Put 2 tblsp of oil into the frying pan. Then use rolled up paper towel to cover the pan with the oil. Put the batter mixture you prepared earlier next to the frying pan. Then quickly add 3 tblsp of the batter mixture to the frying pan. Then swirl the batter around the pan by tipping and turning. Put the pan back on the cooker and continue to heat until the batter turns pale and is lightly cooked. Small holes will appear on top when ready. Prise the now cooked pancake out off the pan by loosening the edgeswith a fish slice. Then flip it over and cook for another half minute. Next slide the pancake on to a plate and cover it with a clean tea towel. Repeat the previous steps until all the batter has been used. Now heat a tblsp of oil in a sauce pan and add the mince. Break it up and cook until it all turns brown. Stir in the pasta sauce and turn up the heat until it boils. Then simmer for 5 minutes more. Now lay a pancake on a plate and spoon on 2 tblsp of the mince and sause mix onto one side of the pancake. Then fold over once then again to create a rolled pancake. Lay the pancakes joint side down in an ovenproof dish. Then turn on your grill then spoon on the sour cream and sprinkle the grated cheese on top. Cook under the grill for a few minutes until the cheese bubbles and goes brown. They are now ready to eat, For toddlers let them cool for a minute. Heat a small frying pan on a medium heat for around a minute. Stuffed pancakes is a really tasty toddler meal that is simple to make and the kids will love. |
